View Full Version : Red, Gold and Green Skillet Casserole

1 med onion
4 med plum tomatoes
1 med bell pepper
1 T butter
1 T olive or vegetable oil
2 cloves garlic, minced
2 c chicken broth
1 can (4 oz) chopped green chiles
1/2 t oregano
1/4 t pepper
1/2 lb small tube pasta
1 1/2 c grated monterey jack cheese

Chop onions, tomatoes, and bell pepper.

Melt butter over medium high heat in large oven-proof skillet. Add onion and garlic and saute for about 5 minutes.

Preheat the boiler.

Add everything but cheese and pasta to the skillet and bring to a boil on high.

Add pasta, reduce heat to low, and cover. Simmer, stirring frequently, until pasta is al dente, about 9 minutes.

Stir in 1 c of cheese and sprinkle the remainder on top.

Broil 4" from heat for 3 - 5 minutes.
