I don't know measurements so I am just going to give ingredients and just walk you through what I do - there is no right or wrong way with this, it's going to be good no matter what...
This is a great dish to prep for and toss together when company arrives
Grilled chicken breasts (I marinate them in whatever I love at the moment - so far the best have been marzetti sweet or golden italian dressing!) Grill it and set it aside to cool
Cook about a pound of bowtie pasta ...
while it's cooking...
Chop up a good amount of oregano and basil (fistfulls of each I guess?)
Chop up a few cloves of garlic
Chop several nice ripe tomatoes ( I use roma or vine ripe)
Drain and chop a jar of roasted red peppers (or brush red peppers in olive oil, sprinkle with salt, and grill in a foil pan,then chop - even better IMO!)
Blanche a bag of baby spinach and drain
Slice the chicken breast into salad sized bits
When pasta is cooked, drain and pour into a serving bowl. Add herbs and veggies, pour in a couple good swigs of olive oil, and toss. Top with sliced chicken and serve with sprinkles of goat cheese. (a little goes a long way, remember) Salt and pepper to taste.
