The name comes from what this stew looks like - let's just say it isn't the prettiest dish on earth. But it's really good, simple to make, pretty easy on the budget, and you can sub veggie crumbles for the ground beef easily.

Shipwreck Stew

Serves 6 - 8

1 tablespoon vegetable oil
1 large onion, sliced
3 cups potatoes, peeled and chopped
1 pound ground beef, extra lean
1/4 cup rice
1 cup celery, sliced
16 ounces red kidney beans - drain and save juice
1/2 cup water
1 teaspoon salt
dash pepper
1 tablespoon Worcestershire sauce
8 ounces tomato sauce
1/4 teaspoon chili powder

Place oil in large, heavy saucepan. Spread onion slices over in a layer, then potatoes. Break ground beef into bits over potatoes. Sprinkle rice over, then add celery in a layer, then kidney beans.

Mix together kidney bean juice, water, salt, pepper, Worcestershire sauce, tomato sauce and chili powder. Pour over ingredients in pan. Cover tightly.

Turn heat to high until mixture starts to bubble, then turn to low and cook 1 1/2 hours. Stir stew and serve.

We make this all the time with soy crumbles instead of beef, and it's wonderful!

Do you cook the ground beef first? It doesn't SEEM so, lol, I just wanted to check! This sounds like perfect comfort food.

Nope, you don't need to cook the ground beef first. You *can* brown it a bit with the onions, but it's easier not to. And you're right - t's great comfort food!
