I have two different recipes for basic bean recipes. One calls for one lb of pre-soaked dried beans and 6-8 cups water soaked cooked on *HIGH* for 12 hours. The other calls for 1 cup pre-soaked dried beans and 3 cups water cooked on low for 10-12 hours. I already soaked a lb of beans. I want to cook them overnight but I want to be sure they aren't going to burn. Anyone know for sure how much water, what temp and what cooking time a lb of pre-soaked dried beans should cook in? Thanks!

Thanks!I may be no help but I'll tell you my routine:

1 bag beans, put in bowl, cover in water, soak overnight.

Drain, rinse, sort. Put in crockpot, fill to the top with water, cook all day - 8-ish hours, on high. Sometimes they can even stand another hour of cooking.

So. . .translate that to what you want to do, sounds like if you soaked a pound of beans (is that a bag of beans?) you could dump them in the crockpot, fill it to the top with water, and cook them overnight on high.

This is an EXCELLENT way to cook beans! I have developed something of a senile streak lately, and have burned two entire pots of beans on the stove. Living in a grass and wood abode, this is even more dangerous than a simple house. I soaked the beans during the day and this morning woke to perfectly cooked beans. Lunch was beans and enchiladas and the beans were cooked better than they ever have been before. I didn't measure anything; I used about 1/2 kilo of beans (maybe less) and covered them generously with water in the crockpot. there was a LOT of leftover water, so in future, I'll use less for cooking.

Thanks to the OP for the thread; I never would have cooked this way without it.

here's what I do-

soak beans overnight- I fill the crock alomst to the top w/ water.

next morning, I dump and rinse, then put the beans back in the crock and fill with fresh water 3 inches over the top of the beans. Cook on high all day. at least the 9 hours I'm at work.

I save the bean water for stock...freeze it.

I do it almost like those who already posted, but with one difference: I soak overnight, drain, then I fill with a mix of broth and water for flavoring, plus chopped onion. I cook on low for most of the day, on my crockpot high dries things out. I use chicken stock but veggie stock would taste good as well, I think using broth really adds flavor. I add a can of tomatoes towards the end, with salt and other seasoning (I've been told over and over from my hispanic clients that you never add tomatoes in at the beginning, it makes the beans starchy, never tested the theory, I just trust!)

. . .have burned two entire pots of beans on the stove. Oh, me too! And that's a terrible, awful smell in your house for a really long time! And a ruined pan.

Thanks everyone! I had been using bulk bought dried beans from the health food store and cooking them in the pressure cooker for years. Then D got his food allergy diagnosis and I realized I shouldn't be using bulk beans. I have looked on and off for 4 years for dried, organic beans and *still* don't know of a source that is not processed on shared equip with my son's allergens. So, I have been using organic canned beans. But I know Goya dried beans, while not organic, are safe for D so I'm thinking to switch. The price is *so* much less and it would be nice to cut back on how much we spend. The crock put is such an easy way to cook everything! I just love it! I made my first batch of beans after I posted. Thanks for the replies! :) the beans came out *great*! Much better than from the pressure cooker IMO. And I just finished eating a dish I made with them. They lasted *so* long! :)
