This was so delicious. I made a double batch of this, and it made about 20 large pancakes and we froze more than half of them. Notes: Since I didn't have cream I was going to just use milk...then I realized I was out of milk too. So I went to the store and got cream. I do wonder how it would be with milk, for a lower-cal version. Also I couldn't find the chord to my hand mixer and I got tired of whipping the egg whites, so they were still pretty watery.
I used 2 large zuchini and 3 small yellow squash to make the 4 cups of grated squash. (I used my food processor to grate.)
We ate it with melted butter. Yum.
2 c. finely grated summer squash
2 eggs, separated
1 tsp. salt, plus a dash
1/2 c. heavy cream
1 c. flour
1 tsp. baking powder
Combine. Beat egg whites and fold in last. Bake on a buttered griddle like pancakes.
