I used the recipe off the bran box but modified it a bit. I was really looking to use up my bananas and I must say these are pretty good!
1/4 cup apple sauce
2 ripe bananas
1/2 cup brown sugar
1/4 cup molasses
2 eggs
1 cup milk(I used almond)
1 cup whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp salt
1 1/2 cups wheat bran
Cream apple sauce and sugar together. Mash in and blend bananas. Add molasses and eggs, and beat together well. Add milk and then bran. Combine flour, baking powder, soda and salt together. Add to liquid ingredients. Place in greased muffin tins and bake at 400F for 18-20 min. (mine were done in 15) Makes one dozen large muffins.

133 calories, 3 grams of fiber, and 1.5 grams of fat per muffin. 2 points!
