Great way to use up summer squash, and they would make a perfect meal with some salad or fruit along side. The lime is optional - they taste great with or without lime juice. They're also almost better at room temperature, so you can make these ahead a bit.

This is a recipe adapted from Nigella Lawson's Forever Summer cookbook.

Zucchini Fritters

1 1/2 pounds zucchini
bunch green onions, chopped
8-9 oz feta cheese, crumbled
small bunch parsley, chopped
small bunch mint, chopped
1 tsp paprika
1 cup flour
salt and pepper to taste
3 eggs, beaten
oil for shallow frying (olive oil is nice here)
3-4 limes, quartered (optional)

Grate zucchini and lay out on a cloth for ~ 20 minutes so it can dry out a bit.

In a large bowl, mix all remaining ingredients except oil and limes. Add in zucchini and mix well - it will be thick and hard to stir.

Heat small amount of oil in large skillet, then drop fritter mixture by spoonfuls and cook until brown on each side. Drain. Serve with lime juice, if you like.

mmm fritters.

My mom never put cheese in hers though.

Even better were the zucchini flower fritters, she'd make them super simple, and we'd eat them with maple syrup.

Ooooh, those sound yummy. What did she put in them, besides the zucchini flowers? We're going to be overrun by squash and squash flowers very soon :yum:.

Just flour, egg, salt and pepper iirc. If she had a lot of flowers she left them whole, if she only had a few she'd cut them into pieces.
