I have 2 boxes of ww phyllo dough in the freezer that I need to use up before we move, but I can't remember what recipes I bought them for. Any suggestions?

I'll just second these suggestions and then mention that someday I *will* make GF phyllo dough so I can make these. I love them both so much!

Do you have a specific recipe that you use?
You could make a "sort of" quiche with eggs and cheese and mashed potatoes....(and asparagus!!!) and use the dough as the pie crust. But to use the dough you need to brush each layer with butter and do it quickly so the layers don't dry out. Then put it in a square cake pan and turn the edges in a bit so you get an edge.
Or your could cut it to large squares and fill with (non-runny) fruit...apples raisins and cinnamon?....or even salmon with some spices.
Or sprinkle sugar and cinnamon and raisins on a stack of layers and roll up and bake.

There are a whole host of "pitas", phyllo pies made with various greens or vegetables. Just layer a few layers of phyllo in a pan (9x13 works, or on a cookie sheet if your filling is firm or you don't mind something sort of free formish), top with the sauteed greens or veggies of your choice, maybe some feta or a hard cheese grated, top with more layers of phyllo. The more oil you use in between the layers, the flakier they will be. Cut thru the top layers a little before baking to make it easier to cut later.
You can cut the sheets into squares and layer them in a muffin tin to make shells, use oil for savory and butter for sweet, then fill the shells with anything from veggies to seafood to meats to pudding and fruit.

He roasted a bunch of vegetables up and then basically wrapped them in a phyllo dough "burrito" with some really good cheese. So - he prepped the dough standard phyllo preparation with putting down several layers of phyllo, brushing each with some olive oil so they get crispy when you cook them, then after several layers of phyllo (the whole sheets, no cutting them up into pieces needed) he put on the veggies, cheese, herbs and spices and wrapped it up like a burrito with both sides tucked in, then baked it in the oven until melty and crispy and delicious. It was really, really good.

I use puff pastry dough for those...though I bet you could figure a way to use phyllo dough, too :hmmm:
