Red Beans with Soyrizo

1 lb dried red beans
½-1 lb of soyrizo (the real chorizo would work too of course.
1 med onion, chopped
1 28 oz can of tomatoes (diced, stewed or whole)
salt, pepper and cayenne to taste


Soak beans overnight in water in the fridge. Drain them in the morning. Add them and fresh water to cover them to crockpot. Cook alone on HIGH for 3-4 hrs. Add chopped onion, sausage, tomatoes, salt, pepper & cayenne (red pepper flakes are ok). Cook for additional 3-4 hrs on high. Viola! Serve over rice or with cornbread.
